LAEPOCA mezcal is produced in the Santiago Matatlán region (Oaxaca, Mexico) in the so-called proceso artesanal. This means that, unlike industrially produced mezcal, LAEPOCA is produced using traditional craftsmanship. The maestro mezcalero strictly monitors that all production steps are carried out carefully. Laepoca Mezcal Espadin is made from 100% agave hearts. The heavy agave hearts are cut in half and roasted on hot stones in a special process covered with agave leaves. After 48 hours, they are crushed and the agave juice is squeezed out. The agave juice is then fermented in wooden barrels. After double distillation and filtration, the mezcal is carefully bottled by hand. Laepoca Mezcal Espadin has a soft, fruity flavour with a hint of oak and honey. It has a slightly smoky flavour and is suitable for mezcal lovers to enjoy on its own or as an addition to cocktails.
